YUM! I made two minor changes only because we didn't have everything on hand. I subbed the plain yogurt for vanilla, then subbed the crused for whole (and had to crush it myself), and instead of the frozen pineapple concentrate was just maybe a little more than 1/4 of a cup of regular pineapple juice. Plus I added the shredded coconut. It was a little difficult to get them out of the popsicle molds, but with a little warm water and a butterknife I carefully managed to get them out. Perhaps the papercup method would be better......... at least then you could always just peel off the paper. Very tastey, even my mom loved it and she doesn't like any type of "fruity" frozen treats. I am really enjoying these pops even though there is a bit of chill in the air. I used non-fat yogurt. I also added some juice from the can of pineapple, a little splenda, and yellow food-coloring since I did not have condensed pineapple juice on hand and I was so anxious to make them.
