Not only were these easy and oh so quick (scrambled eggs in less than 2 minutes!), but they were tasty scrambled eggs. The scallions and tomatoes really added a lot of flavor. Thanks for posting your recipe, Redbelly. Made for the Spring 2014 Pick-A-Chef event.

I did mine in a microwave jug, though had 1 n:oops: moment and added the cheese to the egg mix and then microwaved for 3 x 45 second for a very filling breakfast, thank youRedbelly, made for Name That Ingredient tag game.

This recipe has been a life saver! Mornings are SO busy in our home & we are a family who likes to have eggs for breakfast. Making them the way we like them is very time consuming, so this is perfect, & a very healthy quick way for breakfast! I use a coffee mug & spray it with Pam. I use 1 egg white & 1 whole egg. It is also great since we can each add anything we want depending on our tastes that day! I can have spinach, red pepper, & a bit of feta & eat it on toast. My DH can add in precooked bacon, spinach, & cheese throw it in a wrap on the way to work. DS can just have cheese & salsa & eat it out of the mug! Everyone can make their own bfast mugs & we are out the door quickly & everyone is happy! SUPER! Thank you for the recipe! We make it every morning now!

I've made this frequently...I tried fresh rosemary & feta as suggested, as well as tomatoes, asiago & green peppers, as in the picture. I think I'll try salsa and cheddar with some avocado...or finely chopped spinach and mushrooms. This is great for quick experiments!! Thanks!

this is the first time i have made scrambled eggs in the microwave and it worked really well, however i had to start over because i have a 900w microwave and didn't estimate the times correctly but the second time it turned out really nicely, and i didn't use the cherry tomato, thanks for posting

I'm not a great fan of scrambled eggs, but did want a change from my usual breakfast. The onions and cheese make the eggs more palatable. Thanks for sharing.
