- 1 cup butter, softened
- 1⁄4 cup sugar
- 1⁄4 cup crushed peppermint candy
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1⁄4 cup cornstarch

- 1 cup confectioners' sugar
- 2 tablespoons milk
- 1⁄2 teaspoon pure vanilla extract
- 2 tablespoons crushed peppermint candies
directions
- Mix butter, sugar, crushed candy and vanilla -- gradually blending in flour and corn starch.
- Form 1-inch balls and place on parchment paper-lined baking sheets. Gently press down on each cookie to flatten.
- Bake in 300°F oven for 25 to 30 minutes or until bottoms start to brown.
- Cool and remove to a wire rack.
- Combine confectioners' sugar, milk and vanilla until frosting is smooth. Drizzle on cookies and sprinkle with crushed candy.

Made recipe as written. I'm new to baking so this will be obvious to some but the candy melts leaving holes in the cookie. The candy also makes the cookie chewey. Next time I will crush the candy to smaller pieces or just substitute it for peppermint extract. I really like the peppermint flavor and shortbread combination.
Tweaks

I made these last night and they were amazing but it needed some tweaks!! I upped the sugar and peppermint to 1/2 cup BUT next time I would increase the peppermint to 3/4 cup to give more of a peppermint flavor. You could also add 1 tablespoon of peppermint extract. Also, when I baked my cookies at 300 for 25-30 minutes, my cookies came out EXTREMELY hard. I baked my cookes at 350 for 18 minutes and they were PERFECT!!
