Peppermint Shortbread Cookies

  • Mix butter, sugar, crushed candy and vanilla -- gradually blending in flour and corn starch.
  • Form 1-inch balls and place on parchment paper-lined baking sheets. Gently press down on each cookie to flatten.
  • Bake in 300°F oven for 25 to 30 minutes or until bottoms start to brown.
  • Cool and remove to a wire rack.
  • Combine confectioners' sugar, milk and vanilla until frosting is smooth. Drizzle on cookies and sprinkle with crushed candy.

  1. I just took the first batch out of the oven so I decided I should try one to make sure they were ediable LOL! OMG!!! These are awesome even with out the frosting! I'm going to do some with frosting and some with drizzled chocolate... I can't wait! Thanks for posting this!
     
  2. Made recipe as written. I'm new to baking so this will be obvious to some but the candy melts leaving holes in the cookie. The candy also makes the cookie chewey. Next time I will crush the candy to smaller pieces or just substitute it for peppermint extract. I really like the peppermint flavor and shortbread combination.
     
  3. I am not a fan of peppermint candy, but what a yummy cookie!! My eldest said it was as good as the cookies he had at his class Christmas party. I will be making this recipe again!
     
  4. These are my favorite cookies this holiday. (I seem to have a new favorite each year.) I didn't read the frosting directions very well but I did discover that mixing the peppermints directly in with the icing turned it a pale shade of pink, pretty. YUM YUM YUM
     
  5. These were okay. I was hoping they'd come out softer, so maybe next time I'll cook them a little less. I used parchement paper so they didn't burn on the bottoms at all and they were pretty once they were all finished with frosting and all.

Tweaks

  1. I made these last night and they were amazing but it needed some tweaks!! I upped the sugar and peppermint to 1/2 cup BUT next time I would increase the peppermint to 3/4 cup to give more of a peppermint flavor. You could also add 1 tablespoon of peppermint extract. Also, when I baked my cookies at 300 for 25-30 minutes, my cookies came out EXTREMELY hard. I baked my cookes at 350 for 18 minutes and they were PERFECT!!
