      I have started using Vanilla Syrup for the syrup just use peppermint extract for the vanilla. I have made this many times since my first post. I found that if you put the white choc. chips in a small amount of 1/2 and 1/2 and when melted then add the remaining 1/2 and 1/2 plus the peppermint syrup. It works much better. LOVE THIS RECIPE. I made this as written and it is very good, but I will add more syrup on the next batch as I like mint flavoring. I used a white mint chocolate chip that had sprinkles on it and that turned the creamer pink. Didn't affect the drinks though, and will be making this all the time.       This is yummy! I order my flavored syrups from a local coffee shop. They sell the Monin syrups - so I go to their website and pick the flavors I want ordered. The shop sold all the peppermint this month before I found this recipe so I bought the Frosted Mint. This is very good. It is light with a hint of the mint. I used 1/2 choc. chips after reading some of the reviews and 1/4 c. mint flavoring due to it being such a light taste. I also added a couple tablespoons of the mint flavoring in to the whipped topping for my drink and my boys hot choc. drinks. I added candy canes for stirring. Very comforting drink.       I am drinking a cup of coffee with my new Peppermint Mocha Creamer. I stocked up enough of the powder creamer (Peppermint Mocha) back in December and knew it would only get me to July. I figured I would deal with it at that point. After searching endlessly online and being ready to drink expired powder (if i could even find that) I found this recipe. THANK YOU, THANK YOU! I can make it through the holidays and at that might just keep making my own. I did add more peppermint syrup because I really like the mint taste. Thank you Ashbabe for coming up with this recipe for all the Peppermint Creamer Addicts that there are out there. Cheers!

      I looked high and low for peppermint syrup but I could not find ANY!!! Is this seasonal as well? Anyway I used peppermint extract along with stevia in place of this. Probably not exactly what should be used but good nonetheless! Thanks for bringing Christmas back to my morning coffee. YUMMMMM!

      Thanks Ashbabe! You inspired me to take your recipe & run with it. We too are PML addicts, having not only exhausted my search of all food stores in the Western NY area for a "fix", I also contacted the company & complained. In any event, I gave your recipe 4 stars. We thought it was not quite minty or chocolaty enough. So on my second trial, I increased both the mint as well as the morsels to 1/2 cup each and also used regular half & half. To hubby & me, it is now "almost" perfect [missing the junk the company puts in it perhaps?]. I also think maybe I will try using mint extract next time....Starbucks has all that sugar in it! Again, thanks so much for the inspiration since we wouldn't have a recipe @ all if not for your nudge.

      I'm glad I'm not the only one crazy enough to go searching the internet for a copy-cat recipe of this. I love it in my coffee, obviously, but I, as of late, have a glass of milk at night when I go to bed to satisfy my "fake hunger" rather going and having a sandwich or something that late at night, and I love to put this in my milk to mix things up a little. I might also note that almost all Coffeemate flavors taste excellent in milk. Forget chocolate and strawberry syrup, use coffee creamers! Thanks a ton for this recipe! I was going to make one up myself had I not found this!

      I too am withdrawing from this stuff after the holidays, hence the reason I am commenting on this recipe. It is very easy to make, takes 2 minutes! I just made up 2 batches, one of me, one for my coworkers. At first, I didn't think the amount of white chocolate chips was enough, but believe me, when they melt, they are more than enough! But, I found that the amount of peppermint was not enough for my taste. I required 1/3 to 1/2 cup before I was satisfied with the mintiness. Now, once the creamer cools, I may be sorry I added so much if it changes upon cooling. I have not yet tried it in my coffee, but I'm sure I will enjoy it. Thanks for the recipe!

      Yummy! And only 3 ingredients! It's the middle of July, but I didn't want to wait until this December for the stores to finally stock my favorite coffee creamer. So I searched recipe sites on the Internet, looking for a good recipe. I decided to try this one. It's a winner! Now I can have my favorite creamer year-round. It's so simply to make, and I happened to have all the ingredients on hand at home. It mixes up quickly--in less than 5 mintues, and it made enough to last me for several weeks. It's as good (maybe even better) than those expesive ones you buy in the store or get at Starbucks.
