I haven't tried these yet but, I love mint flavored anything. They sound really good.
- 1 1⁄2 cups butter
- 2 eggs
- 1 1⁄2 tablespoons baking powder
- 6 cups all-purpose flour
- 2 cups sugar
- 1⁄2 cup milk
- 1 teaspoon salt
- 1 1⁄2 cups crushed peppermint candies (candy canes)
- Preheat oven to 375 degrees. Cream butter. Add sugar and blend until light. Add eggs one at a time, beating well after each egg. Sift dry ingredients and add to butter/sugar/egg batter in two batches alternating with milk. Stir in crushed candy. Spoon onto greased cookie sheet and bake for 10-12 minutes until lightly browned. Makes five dozen.
I also was wondering if the amount of flour was a typo. I used a ice cream scooper to put the cookies on the cookie sheet and still got a large amount of cookies. I think the recipe would be good for Valentines Day also, the cookies come out with a pinkish color. But the cookies did not taste that sweet.
I was a little skepitcal about the amount of flour used, but I can honestly say these were very good. The batter will be very heavy. I used a mellonballer to scoop and got twice as many cookies. Thanks for the recipe.
