  1. coarsely crack the peppercorns.
  2. lightly salt the fish fillets then roll them in the cracked pepper.
  3. heat the oil in a frying pan and brown the fillets on all sides for 3 minutes, or until just cooked through. [take care not to over cook. if necessary cook each fillet at a time, try not to steam the fish by overcrowding the pan].
  4. serve with a salad, pasta or crusty bread on the side.

This was very good, but maybe I cooked it wrong. Next time I'll make sure the pan is VERY hot so it seals in the pepper flavor. Will try again! Thank you!

Good basic recipe. I decided to blacken my cod in a cast iron skillet with the peppercorns. Although I don't eat fish (I'm a vegetarian), my handsome other half says it's a weekly repeat. (we'll see about that!) ;) Thanks Fuji.
