  • In a nonstick skillet, saute onion and garlic in butter for 2 minutes.
  • Stir in peppers; cook for 3 minutes.
  • Add zucchini, summer squash, and carrot; saute 3 -4 minutes longer or until vegetables are tender.
  • Sprinkle with seasonings.

I am a teacher who is near the end of my career. I have many craft interests and have just added cooking to my list. Since I like to keep a check on what DH eats I usually try to follow the WW diet and just love their cookbooks.
