Lime and fluffy is great for fish and chips
- 3 limes, juice of, squeezed
- 1 cup rice flour
- 1 teaspoon baking powder
- 1 pinch salt
- 2 egg whites
- 3⁄4 cup water
- pepper (don't be afraid to add a little kick)
- This one is a beauty. Lime seems to go with almost everything. Putting them into fish batter just makes sense. This is a quick and easy batter to put together. If you are a lime fan – give it a whirl! It makes enough for about 2 pounds of fillets.
- Mix the ingredients well in a bowl ensuring all the lumps have been removed. Pat fish dry before dipping in the batter. Fry until golden brown.
