Pepper and Cucumber Salad

ingredients
- 2 cups cucumbers, coarslely chopped (about half of a very large cucumber)
- 1⁄2 cup sliced red onion
- 1⁄4 yellow bell pepper, sliced
- 1⁄4 red bell pepper, sliced
- 1 small garlic clove, finely chopped
- 1 medium tomatoes, seeded and coarsely chopped
- 2 tablespoons fresh parsley, chopped
- 1⁄2 avocado, chopped
- 1 toasted whole wheat pita bread, cut into bite size pieces

DRESSING
- 5 tablespoons lite olive oil
- 2 garlic cloves, crushed
- 2 large lemons, juice of
- lemon zest (optional)
- kosher salt & fresh ground pepper
directions
- Add all the salad ingredients except the avacado and toasted pita bread.
- Mix the dressing ingredients together Season to taste with salt and pepper.
- Just before serving add the chopped avacado and toasted pita bread.
- Drizzle with the dressing and serve.

This was a nice refreshing salad, with many cooling vegetables for variety. The dressing is very lemony. Lots of lemon juice in it, and I think next time I would reduce that (personal preference) and maybe add some vinegar to replace it. I really liked the toasted pitas as an alternative to croutons, and I think I will do that more often in many of my salads. Thanks for a refreshing side to go with our grilled tri-tip roast and potatoes for dinner tonight.

I was one of the original members of Recipezaar that was truly a community of individuals that enjoyed each other in forums and chat rooms. I've been a member of this site since 2003. Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member. It's just a tad boring now and just another recipe site like all the rest. Sad.
