  • Cream the butter and sugar.
  • Stir in remaining ingredients and blend well.
  • Roll the dough to 1/8th inch thickness and cut with cookie cutters.
  • Bake at 400 degrees F for 8-10 minutes.
  • Cool on wire racks.
  • Meanwhile, stir hot orange juice into powdered sugar a few drops at a time until it is thin enough to drizzle.
  • Drizzle cooled cookies with glaze or spread with a knife.

  1. These tasted just like the pepparkakor my Mor-Mor used to make, but they came out a different colour and texture than I'm used to - they were more grey and less orange. They also made much less than listed - maybe three dozen, at the most. However, they tasted perfect, even though I skipped out on the glaze.
     
  2. Kaarin, what size are your cookie cutters? I ended up with 3 dozen small cookies and another 2 dozen large ones. Needless to say it took a bit more than 30 minutes. :-) All kidding aside, these were fantastic cookies. I was a little worried about whether they would be too spicy for the kids but indeed the spices are just right very flavorful but not overwhelming. The orange is subtle and backs up the spice very nicely. The cookies themselves are crispy yet quite tender - and easy to make as the dough was quite firm and resilient. I actually preferred them without the glaze but with our without - they were superb. Thanks!!

I'm a stay at home mom with 3 adorable children-an 8 year old daredevil son, a 5 1/2 year old princess and a wild little 2 year old girl! I love to cook, and like having my little helpers in the kitchen! I usually love recipes that are completely from scratch (I still love them actually) but right now my focus is on having any kind of food ready by mealtime! It's a little crazy here lately. Every summer we have a huge organic garden, apple orchard and raspberry and blueberry patches, along with a woods full of wild foods waiting for me to learn what they are so I can collect them. I'm learning about wild mushrooms first, so if anyone has any tips, let me know. We also eat wild venison which my husband and I hunt ourselves. It's our favorite meat, since it's lean, organic and cheap! Some of my hobbies are: hiking, biking, rock climbing, gardening, playing in the water with my kids, or just swinging in the hammock with a good book. I go stir crazy if I spend too much time inside.
