Our family has found these to be addictive! They are even better warm! The only down side is pepitas can be difficult to find here in the midwest. We can only find these at our local organic/natural food store.
- 2 cups pepitas (green hulled pumpkin seeds)
- 2 teaspoons olive oil
- 1 teaspoon kosher salt
- 1⁄2 teaspoon chili powder
- Combine all ingredients.
- Roast in shallow pan at 350°F for 1/2 hour stirring at least once. They can be roasted longer for a toastier flavor.
- Cool on paper towels.
You can grow the special pumpkins that produce these green hullless seeds and have a supply right in your own backyard. They're called Kakai and seed is available from Johnny's in Maine. http://www.johnnyseeds.com/catalog/product.aspx?scommand=search&search=kakai&item=2860
A simple, excellent recipe. Everything listed in the description is true - they ARE addictive and they're even better warm. Roasting seems to make the seeds drier and lighter on the palate, with a nice mellow roasty flavor to complement the taste of the seeds themselves. I made a double batch for a party at work and it was all gone by the end of the day. Thanks for sharing a great recipe.
