I have made this dish several times now and it has become one of my go-to recipes when I have fresh spinach on hand. Being a spinach lover, I actually use a lot more spinach than the recipe calls for - between 12-20 ounces (fresh). The spinach cooks down a lot, so even though it sounds like much, it isn't. If you don't have feta on hand, parmesan tastes great on it, as well. We serve this over whole what pasta. Great recipe, thank you for posting!
This was so good. I didn't have feta so I just had it without. I ate this with this marinated tofu Basic Marinated and Baked Tofu. A great combo.
Such a good recipe! I added a little turkey sausage and more spinach, and used halved cherry tomatoes instead of diced. It tasted fresh and light - my family loved it. Thanks for posting.
GREAT pasta recipe, so easy! I subbed vegan "tofeta" (homemade- basically just firm tofu, turned feta-esque in a marinade) and added some extra spinach :-) Worked great! Thanks for posting.
The local store didn't have any feta today so I added salmon for the protein. Super simple and quite delicious. I used lemon pepper linguine which was ideal with the added salmon. All of the flavors came together beautifully to make a very enjoyable one dish meal.
A wonderfully delicious pasta! :) I couldn't resist increasing the garlic to 4 cloves and adding a thinly sliced leek as I love the subtle blend of flavours of onion, garlic and leek together. I also added some rosemary and sage to the oregano. I used baby spinach leaves and probably more like 3 cups. Yes, I love garlic and I love spinach! :) The combination of flavours was superb, and I love the inclusion of the feta, the fact that this dish is vegetarian and that it is relatively low in fat. A recipe that I'll certainly be making again and again. Thank you for sharing it, appleydapply. Like the earlier reviewers, I didn't cook the sauce for as long as the directions suggested. Baby spinach leaves wilt when introduced to heat and just wilted was how I wanted them so once I'd added them I didn't cook the sauce any longer. Made for 1-2-3 Hit Wonders.
We enjoyed this for Vegetarian Night. Love all the ingredients. I did not saute the onion, tomatoes, nor spinach as long as directions b/c I love the bright colors. This was so good that the two of us ate every speck! Made for appledapply's prize for Top Favorites of 2008 Game for TOP (Tagged Out Player) win.
I thought this was a fantastic, meatless main dish (I used it for my lunch). Using fresh tomatoes and spinach make this very flavorful. A few notes: I didn't cook the sauce mixture for the full amount of time and I didn't use the full amount of feta cheese. This is a great, healthy recipe. Easy, too!
