This was lovely, thanks Penny. I only used 1/4 cup onion and was glad I did. I was afraid the ketchup would be too prevalent, so I added a squirt of mustard and a shake of garlic powder. I do dressings in my food processor, this way, after combining all the ingredients, I add the oil in a thin stream while it is running. This emulsifies it...it thickens immediately and doesn't separate in the fridge. Delicious and beautifully red!
