Penne With Tomatoes

"This is a throwback from my vegetarian days. It's also a quick dinner when you don't want to go to the grocery store as I almost always have these ingredients on hand. For extra fiber, I sometimes throw in some chickpeas. I often top this with fresh basil and shaved parmesan and serve with a crusty bread."

directions

  • Boil pasta according to directions.
  • Heat oil in saute pan.
  • Saute garlic & red pepper flakes in oil for about 2 minute.
  • Add onion. Cook 1 minute.
  • Add peppers & zucchini until softened.
  • Add tomatoes with juice, and spices.
  • Simmer on low about 10 minutes.
  • Add cooked pasta
  • Top with fresh basil & parmesan if desired.

I am the proud mom of three great kids aged 9, 6 & 20 months. I previously worked as a counsellor but decided to stay at home after my second child was born. We live in Southern Ontario but have been crisscrossing North America as my husband gets transferred every couple of years. I love to cook and gradually have been refining my cooking skills over the past few years. I am a recovering vegetarian and I cannot imagine a diet without chicken, beef & fish. I love trying new dishes and am fortunate that my family has an open palate and likes sampling my creations. (Most of the time :))
