these are a small heavy muffin, they dont rise, so dont think you have done something wrong! these are so wonderful with coffee. given to me fron my southern friend, her old family recipe, i added vanills to the recipe.
- mix first 3 ingred in bowl.
- make a well in center.
- beat eggs till foamy, stir butter and vanilla in with eggs.
- add to dry ingred.
- stir just till moist place in greased muffin cups, 2/3 full.
- bake 350 degrees for 20-25 minutes.
These are sooooo good. I made these some time ago and they were gone in no time. My son even likes to make these. We did use chopped pecans instead of pecan halves, but I think they turned out ok.
