You will enjoy these if you are trying to eat healthier but still need something sweet! These really do give a delicious flavor not unlike pecan pie! (although the crust by itself is not super tasty.) I'm very interested in seeing the nutrition facts... From

  1. Preheat oven to 350 degrees.
  2. Combine almond flour, 1 egg, oil, cornstarch, and sea salt, using a mixer or a food processor, until well combined; dough will be very stiff.
  3. Press by hand evenly into a greased 8x8 inch square pan; bake for 17 minutes.
  4. Blend the dates in a food processor on high for about 1 minute, until paste-like.
  5. Add the 2 eggs, maple syrup, and vanilla; process on high until smooth.
  6. Pour this filling mixture over the warm crust and evenly sprinkle pecans over the top, pressing them in lightly.
  7. Bake for another 30-35 minutes.
  8. Allow the bars to cool before cutting.

I just made these and like them a lot. I baked them at a lower temperature, 300 degrees F, in a convection oven, and for a shorter time, 15 minutes, and the crust was a bit darker than I'd like, next time I'll do 10 minutes. The topping is great, not too sweet, and moist and chewy- I also baked that for a lot less time, only 15 minutes at 300, and it is perfect. I have a serious sweet tooth but these are satisfying!
