Pecan Encrusted Salmon With Dijon Honey Glaze

This is a fantastic salmon recipe! It is very easy to make in 20 min and is always a favorite.

  1. Preheat oven to 350°; Line shallow roasting pan with non-stick aluminum foil, or spray with non-stick pan spray.
  2. Combine bread crumbs, pecans, parsley and salt and pepper to taste. Set aside. Make Dijon sauce by combining butter, Dijon, honey, garlic, lemon juice and olive oil.
  3. Press crumb mixture on top of salmon. Drizzle Dijon mixtures over salmon and bread mixture.
  4. Bake salmon 15-20 minutes in preheated oven, or until it flakes easily with a fork. Drizzle glaze over salmon again half way through cooking.

I'm not sure how to rate this. It was very different from anything I've ever made and that was actually the reason I wanted to try it. Thanks for posting this, I enjoyed having the chance to make something new and different, just not sure if it's for me.
