  1. Preheat the oven to 350 degrees.
  2. Place the pecans in the oven and toast lightly for 15 minutes.
  3. Cream the butter and sugar until fluffy.
  4. Add the eggs, one at a time.
  5. Stir in the vanilla.
  6. Sift the flour, baking powder, and salt together and add to the butter.
  7. Now stir in the toasted pecans.
  8. Divide the dough into three equal pieces.
  9. Shape each piece into two 1/2 inch diamete logs.
  10. Place logs on a parchment baking sheet and press down to form the classic biscotti shape.
  11. Bake for 15 minutes.
  12. Remove from the oven with a thin spatula, cut into 3/4 inch slices.
  13. Lay slices on their sides and return biscotti to the oven to dry for 15 more minutes.
  14. Cool on rack.
