Found this recipe in the paper a few years back along with several others. They are yummy and really easy to make.
- 3 ounces cream cheese, softened
- 1⁄2 cup butter, softened
- 1 cup flour
- 1 egg
- 1 cup light brown sugar
- 1 1⁄2 cups chopped pecans
- Preheat oven to 350 degrees. In a large bowl, mix cream cheese and butter until well blended, slowly add the flour. Press mixture into a 9x9 inch square baking dish or pan.
- For the filling: In a medium bowl, mix egg and brown sugar and slowly add chopped pecans. Pour over crust and bake 20 to 25 minutes. Allow to cool and then cut into squares.
This was positively the best Pecan Bar recipe I have ever tasted. But I had a really difficult time with the base layer not %u201Csetting%u201D right, and I couldn%u2019t cut it into bars because the base layer was so soft. We had to eat it in a bowl with a spoon. But that was not a huge issue, because it was so wonderful. I will definitely make this again and experiment with the base layer (maybe reducing the amount of butter ??) until I get it right, because this is a %u201Ckeeper%u201D. Thank for you for sharing your recipe, tasmith1. Made for Spring 2011 Pick-A-Chef.
