- 414.03 ml flour
- 4.92 ml baking soda
- 4.92 ml baking powder
- 4.92 ml baking powder
- 4.92 ml cinnamon
- 2.46 ml salt
- 29.58 ml pecans, chopped
- 354.88 ml oatmeal (quick cooking)
- 1 pear, cored, peeled and chopped
- 236.59 ml buttermilk
- 118.29 ml brown sugar
- 118.29 ml maple syrup
- 29.58 ml vegetable oil
- 1 egg
directions
- Preheat oven to 400 degrees F Line muffin tin with paper liners or spray with pam.
- Combine dry ingredients (flour - salt) in a bowl.
- In a small bowl combine topping ingredients (peans and 2 tablespoons oats).
- In a third bowl combine remaing oats and the remainder of the ingredients (pear - egg) -- let stand for 5 minutes. And then add mixture to the flour mixture, stirring until combined.
- Spoon batter into prepared cups, filling about 2/3 full and then sprinkle with topping mixture (pecan/oats). and bake for 15-20 minutes or until toothpick inserted in center comes clean.
- Remove and cool on rack.

These muffins are very moist and delicious, but especially so for someone on a diet! I used skim milk with vinegar added for the buttermilk, and cut even more fat that way. Straight out of the oven, they are great....but I think they are better the next day...letting the pear moisten the muffin a bit more. The topping didn't want to stay on the muffin very well, so next time I would press it on after adding to try and get it to adhere a little better. Non dieters will probably want something a bit richer, but these are yummy for me!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
