Yummy! These cookies are so good. I added 1/2 tsp. baking soda as koolqlt suggested. The first cookie sheet I made just like the above recipe, the second sheet I added chopped crystalized ginger to, the third and final sheets I added semi-sweet chocolate chips along with the ginger. I also grated the pears since they weren't quite ripe. The cookies were moist and delicious!

These cookies were great out of the oven, and even better after a short time in a sealed container. I did not see any leavening in the recipe so I added 1/2 teaspoonful of baking soda. Yesterday's batch was gone in less than 5 hours, so I'm set to make a double batch today. Great way to use up the pears from my tree. Thanks!

This made almost 60 cookies for me. I substitued 1/4 cup of the butter with applesauce. The resulting mixture seemed really dry, so I added some more. I also added butterscotch chips to some and chocolate chips to others. I used fresh pear, which didn't soften as much as I thought it would. Maybe it would be better grated. Novel idea though and pretty tasty.
