  1. Make sure pears are peeled, cored, and chopped or grated.
  2. Grate rind of lime and extract juice.
  3. Mix pears, sugar, rind, juice and ginger together in pan. Bring to boil. Turn down heat and simmer 45 minutes. Stirring until food is clear and liquid has thickened.
  4. Poor into jars and seal.
