  1. Halve and core the pear [peeling, if desired].
  2. Sprinkle pear halves with lemon juice.
  3. Combine crumbled cheese and 2 TBS of whipped cream to make a mixture of molding consistency. Fill the pear cavity with mixture and press the halves together to restore a whole pear shape.
  4. Place pear on a salad plate lined with leaf or Boston lettuce leaves.
  5. Fold Bar-le-duc into remaining whipped cream and spoon over salad.
  6. Can substitute heavy cream for whipped cream.
