I found this recipe on the Boston Globe. It's super easy and it tastes great.

Ingredients Nutrition

  1. Preheat oven to 350 degrees F.
  2. Butter a 8x8-inch pan.
  3. Sift together flour, baking powder, salt.
  4. In a bowl, combine pears, cinnamon, and 1/4 cup of sugar, toss lightly.
  5. Cream butter and remaining sugar together, add egg and vanilla and mix till the batter is pale and smooth.
  6. Add milk alternatively with the dry ingredients, starting and ending with flour.
  7. Pour half of the batter into baking pan.
  8. Cover with pears, then pour the remaining half of the batter, covering the pears completely.
  9. Bake for 35-40 minutes, or until toothpick inserted comes out clean.
  10. Let cool completely.

Delicious. Very moist and very cinnamon-y! My pears kind of sank to the bottom but no harm done with that. This cake would taste great with a strong cup of coffee or a cold glass of milk.

Great recipe next time I'm going to try with apples instead of pears. I doubled the recipee and made a 9x13.

Mmmm, this was yummy! I originally chose this recipe as I had some pears to use, then discovered they had gone all smooshy :( But I really wanted to try it,and found some tinned pears in my cupboard.I had no idea how this would alter it,but me and my partner loved it!Next time I would maybe add a little more cinammon with the dry ingredients, but only because I am a cinammon freak! Thanks for this yummy recipe. (Oh,we had this with warm custard on,and it was gorgeous that way too.)
