In a large bowl, combine brown sugar, peanut butter, Splenda, butter spread, applesauce, egg, and vanilla extract. Mix thoroughly with a wire whisk.

Add flour, baking powder, salt and cinnamon, and stir until completely mixed and smooth.

Add oats and mix until they are thoroughly coated with the batter.

Lightly spray a large baking sheet with PAM. Spoon batter onto the sheet in 12 evenly spaced mounds. Using the back of a spoon, spread and flatten batter into circles about 2 inches wide.

Bake in the oven for about 8-10 minutes, until a toothpick inserted into the center of a cookie comes out clean.

Remove baking sheet from the oven, and allow cookies to cool for 1 minute on the sheet. Then transfer cookies to a wire rack to cool COMPLETELY.
Very nice "healthy" cookie. I think my grandkids will like these and I can give them to them without feeling guilty about it. These went together so quickly. The texture was a little off for us and not sure why. A little "cakey" Thanks for sharing. Made for PAC Spring 2011
