Fantastic peanut icing!!!
- 2 tablespoons peanut butter
- 1 tablespoon margarine
- 2 tablespoons cocoa
- 1 1⁄2 cups icing sugar
- 3 tablespoons milk
- Cream together peanut butter and margarine.
- Blend in cocoa and gradually add the icing sugar and milk to the mix, alternating between in two in small amounts.
- Blend until smooth and apply to cooled cake.
Stores were closed because of a snowstorm - on my daughter's birthday. Needed something a little different but with ingredients on hand and this was perfect! Made a double recipe to fill and frost a two layer chocolate fudge cake and was concerned it was too thinly frosted, but I think any more would have been too overpoweringly peanutty. Vaguely reminiscent of Reese peanut butter cups. Thanks for making a birthday more memorable!
