Peanut Satay Sauce

ingredients
- 1⁄3 cup creamy peanut butter
- 1 tablespoon soy sauce
- 1 cup beef stock or 1 cup chicken stock, use 1 cube and 1 cup water if necessary
- 1 tablespoon grated ginger
- 1 garlic clove, minced
- 2 teaspoons cornstarch
directions
- In a large pan, combine peanut butter, soy, broth, ginger, garlic and water. Mix well and heat through. Add the cornstarch to thicken slightly.

Really great simple way to make satay sauce. I used it with a prawn (shrimp) dish when I found the local store didn't have any satay sauce. While it didn't worry me for better presentation a light soy sauce would be worth considering, the regular soy sauce gives it a fairly dark color compared the commercial satay sauces.
