This is terrific. The chicken came out really tender (I was using some organic chicken thighs I had in the freezer) and the peanut butter-chili sauce-ginger combination of flavors is a real taste treat!
I used boneless thighs and broiled them, so my cooking time was reduced. The chicken turned out juicey and perfectly cooked. I think the peanut butter on chicken just didn't go over as well as I had hoped. I did like it, but not as much as I had hoped. However, I am thrilled to see how moist broiled chicken can be, I always thought it would be dry and tough.
