Peanut Butter Soup

  • Saute onion and garlic in oil. Add celery, carrots, potatoes, and curry powder; stir. Add broth.
  • Bring to a boil, reduce heat, cover and simmer until vegetables are tender, about 15 minutes. Stir in the spices and peanut butter. Puree with immersion blender, if desired. (I like to pull out about 1 cup of soup, puree the rest, then put back the reserved unpureed soup.).

  1. Very tasty but simple peanut butter and curry soup. I used 1 tbs madras curry and 1 tbs ginger. Only enough for 4 servings, by the way.
     
  2. Man this is good. Any any resturant or home this whould receive rave reviews. I used very little curry ( 1/4 teaspoon) and thats about right for our family. I also used the same amount of cayenne pepper and it had a nice aftertaste. If you never had a peanut styled soup try this. If you have what you considered the best in the world, TRY THIS RECIPE!

I'm a 48 y/o gay Jewish man in the suburbs immediately north of New York City. I'm a general internist, practicing and teaching at a medical college north of NYC. I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
