    This recipe comes from a local cookbook called Recipes and Memories of Patrick W. Cox. It's different and tasty. I made a slight change in the ingredients but not much.

    Directions:

      Preheat oven to 375 degrees Fahrenheit.
    2. 2
      Trim fat from tenderloin.
    3. 3
      Sprinkle with fresh ground black pepper to taste.

      Line a baking dish with parchment paper or aluminim foil.
    5. 5
      Mix the soy sauce, peanut butter, red pepper and minced garlic together.
    6. 6
      Spread mixture over pork loin.
    7. 7
      Bake uncovered for 30 minutes.

      Remove from oven.
    9. 9
      Carefully spread pineapple preserves on top of pork loin.
    10. 10
      Bake another 10 mintes or until meat reaches 150 degrees Fahrenheit.

      Let stand for 5 minutes before serving.

      This was delicious! My husband was very skeptical but admitted after trying it that it was actually "really good"
      next time i will double the recipe for the sauce and pineapples but yes, there will definitely be a next time!

      The pictures looked so good, the other reviews were good, I was excited to try this recipe. Unfortunately, non of the eaters enjoyed it. Fortunately, the peanut butter mixture could be scraped off and the meal was saved; the flavor hadn't passed on through the meat. I won't be making this again.

      My husband says everything is better with peanut butter or I probably wouldn't have tried this. So glad I did! Yum! Goes in my KEEPER cookbook.
