My favorite cookies are boiled cookies. So, when I wanted to come up with a treat that I could eat and feel kinda good about eating it, I came up with this. It's my boiled cookies with an attitude adjustment. Hope you enjoy this as much as I do!! Oh, and cooking time here is cooling time.
- 2 cups white sugar
- 1⁄2 cup margarine, I use stick margarine
- 1⁄2 cup milk
- 3 1⁄2 cups quick oats
- 3⁄4 cup peanut butter
- 2 teaspoons vanilla extract
- Place sugar, margarine and milk in large pan and bring to a boil over medium heat. Stir constantly for 2 minutes and promptly remove from heat.
- Stir in remaining ingredients and pour into 8x8" dish. Let set for 45 minutes or until set.
- Cut into bars and serve.
Wonderful and peanut buttery! We love these as much as we love the chocolate oatmeal variety we've eaten for years. New family favorite just in time for hot weather when I hate to heat up the oven and bake anything! I used crunchy pb and old-fashioned oats. Thanks for the recipe.
