  • Preheat oven to 350°F Line two baking sheets with parchment or Silpats.
  • Whisk together flour, baking soda and salt.
  • In a stand mixer (or with a handheld mixer) on medium speed, cream together butter, peanut butter, granulated sugar, brown sugar and vanilla extract until fluffy, about 3 minutes. Add the egg and beat until combined. Reduce speed to low and slowly add the flour mixture; mix until just barely combined. Add oats and chocolate chips, and stir in by hand.
  • Using a large cookie scoop (3 tbsp) or disher (#24), drop dough onto baking sheets 2" apart. Bake 10 minutes, until lightly golden. If baking both sheets at once, rotate sheets 180° and swap racks after 5 minutes. Cool completely on baking sheets then store in airtight containers at room temperature.

I'm a 48 y/o gay Jewish man in the suburbs immediately north of New York City. I'm a general internist, practicing and teaching at a medical college north of NYC. I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
