This recipe can be made 2 weeks ahead. Store in an airtight container and cool dark place.
- 250 g unsalted dry roasted peanuts (1 2/3 cups)
- 1 tablespoon oil, approximately
- Place peanuts on oven tray, bake at 180°C for about 5 minutes or until lightly browned; cool.
- Process peanuts and half the oil until as smooth as desired.
- Add remaining oil if mixture is too dry.
- Makes about 1 cup (250ml).
