Peanut Butter Granola Bars - A.k.a. Frodo Bars

"If Frodo had these on his mystical journey, he wouldn't have gone hungry." --forgotten coworker. I bring these bars with my on multi-day hikes and camping trips. They don't spoil for weeks, they are lightly sweet and very filling, high in protein, fat, carbohydrates, and fiber. Not for weight loss, but excellent for energy. I also bring them in to work as a sweet treat to share. I usually get lots of recipe requests :-).

Ingredients Nutrition

  • 4 cups quick-cooking oats
  • 2 cups nuts or 2 cups raisins or 2 cups dried fruit or 2 cups coconut or 1 small candy, (I like 1 cup sliced almonds and 1 cup dried cranberries myself.)
  • 1 cup natural-style peanut butter
  • 1 cup corn syrup
  • 1 teaspoon vanilla

Directions

  1. In a large bowl, stir together the quick oats and flavourings.
  2. In a small bowl, stir together natural peanut butter and corn syrup and vanilla. Don't substitute regular peanut butter, it is too soft and the granola bars will fall apart. Don't substitute maple syrup or pancake syrup, they are not sticky enough and the granola bars will crumble.
  3. Once the wet ingredients are evenly mixed together, pour the wet ingredients into the dry ingredients, and mix well. You might need to use your hands, like with chocolate chip cookie dough.
  4. Line a baking sheet with waxed paper. Dump the granola mixture onto the waxed paper, and spread out with your hands. Press firmly into shape. Flatten and compress with a rolling pin. Slice into individual bars.
