ingredients
- 1 cup flour
- 1⁄4 teaspoon baking soda
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup solid shortening, soft
- 1⁄2 cup peanut butter
- 2 teaspoons orange rind, grated
- 2 tablespoons brown sugar substitute
- 1 tablespoon sugar substitute
- 1 egg
directions
- Sift together flour, baking soda, baking powder and salt.
- Beat shortening and peanut butter til creamy.
- Add orange rind, sugar substitutes and egg to creamed mixture.
- Beat til light and fluffy.
- Add flour mixture, stirring to blend well.
- Shape level tablespoonfuls into 2 inch fingers and place on ungreased cookie sheet.
- Bake 350F 12-15 minutes.

- place 6-8 fingers on waxed paper and bake on low for 5-6 minutes.

Whether you are diabetic or not, these little cookies are just delightful. I made these as a holiday treat for a diabetic co-worker and am quite certain he will love them. Have to say I was a little surprised by the addition of the orange zest, but it worked quite well in this cookie. The texture was also quite appealing sort of like a peanut butter shortbread. These are a bit crumbly while warm so if presentation is important, then make sure you let them fully cool before moving. I let mine cool on the sheet for 5 minutes, then on a rack for another 15.
