  • Preheat the oven to 350°F Line 2 baking sheets with parchment paper.
  • In a large mixing bowl, cream the butter with the sugar. Beat in the peanut butter, egg and vanilla.
  • Sift together the flour and baking soda. Add to the cookie dough and mix well.
  • Roll the dough into golf ball-sized balls. Place them about 2-inches apart on the prepared baking sheets. Place another sheet of parchment paper on top and press lightly to flatten the cookies. Remove the top sheet of parchment paper.
  • Bake the cookies for 10-15 minutes, or until the edges begin to brown. Carefully remove and let cool on a wire rack.

  1. I overall, enjoyed this cookie recipe and, with a little tweaking, will become a family favorite. The downside is that they are VERY crumbly which would be corrected by doubling the eggs (thats the only tweak I'd make to this basic recipe). The upside is that these have a wonderful peanutty flavor and a delightful melt-away quality which we all LOVED! I also chopped up some semi-sweet bakers chocolate into chunks and mixed in the dough...YUM! I will definately make again!

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
