I love these! The recipe calls for Peanut Butter cups on top, but I'm omitting them here.
Preheat oven to 350 degrees. Using an electric mixer, cream peanut butter and butter in a mixing bowl until smooth. Add brown sugar; beat until combined, scraping down bowl as needed. Add eggs and vanilla, and beat until incorporated.

In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in two batches. Place in fridge for 30-60min to make dough a little easier to work with.

Scoop off dough by the tablespoon; roll into balls. Place granulated sugar on a plate; roll balls in sugar, coating completely. Place 2 inches apart on a nonstick insulated baking sheet.

Bake until cookies are golden brown, about 13 minutes.
I like that this is a smaller recipe, and that the dough can be prepared ahead and stashed in the fridge until fresh cookies are wanted. These puffed up nicely and are a pretty cake-like cookie. Not a ton of peanut butter flavor, a bit on the bland side for me as I would have liked more PB in them. Still good, and REALLY yummy warm! Made for PAC Spring '11.
