From PBS Everyday Food. http://www.pbs.org/everydayfood/baking/recipes/peanut_butter_surprise_cookies.html I love these! The recipe calls for Peanut Butter cups on top, but I'm omitting them here.

I like that this is a smaller recipe, and that the dough can be prepared ahead and stashed in the fridge until fresh cookies are wanted. These puffed up nicely and are a pretty cake-like cookie. Not a ton of peanut butter flavor, a bit on the bland side for me as I would have liked more PB in them. Still good, and REALLY yummy warm! Made for PAC Spring '11.
