  • Preheat oven to 350 degrees. Using an electric mixer, cream peanut butter and butter in a mixing bowl until smooth. Add brown sugar; beat until combined, scraping down bowl as needed. Add eggs and vanilla, and beat until incorporated.
  • In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in two batches. Place in fridge for 30-60min to make dough a little easier to work with.
  • Scoop off dough by the tablespoon; roll into balls. Place granulated sugar on a plate; roll balls in sugar, coating completely. Place 2 inches apart on a nonstick insulated baking sheet.
  • Bake until cookies are golden brown, about 13 minutes.

  1. I like that this is a smaller recipe, and that the dough can be prepared ahead and stashed in the fridge until fresh cookies are wanted. These puffed up nicely and are a pretty cake-like cookie. Not a ton of peanut butter flavor, a bit on the bland side for me as I would have liked more PB in them. Still good, and REALLY yummy warm! Made for PAC Spring '11.
