Peanut Butter Cookie Bites

"This recipe I found in an old issue of Cooking Light. I made it and it was an instant hit with everyone. When I make it I want a stronger peanut butter taste than the recipe calls for so I use about 1/2 cup of creamy peanut butter. I also use a medium size kitchen cookie scoop to form the cookies and drop them onto the pan- just my personal preference."

  • Combine first 3 ingredients in a large bowl.
  • Beat at medium speed with an electric mixer until light and fluffy.
  • Add egg whites and vanilla; beat well.
  • Combine flour, baking soda, and salt; gradually add to the creamed mixure, stirring until well blended.
  • Cover and chill dough about 1 hour.
  • Shape dough into 48 balls. Place 2 inches apart on baking sheets coated with Pam cooking spray.
  • Bake at 375 degrees for 10 minutes or until lightly browned.
  • Let cool, then enjoy.

I live about an hour west from St. Louis out in the country. I love it here it's so peaceful and serene. I tend to spend most of my free time reading, watching movies or tv. I like to watch Food Network shows too, mostly Pioneer Woman, Trisha Yearwood, Ina Garten, and many others. I love cooking for family and friends. I'm always asked to bring a dish to a potluck or dinner. My specialty is baking and making desserts. Recently, I've been looking for recipes for homemade remedies and soaps, and also homemade gifts in a jar to give as presents. I've never tried doing anything like that and I think it would be fun and interesting to do.?
