Peanut Butter Chicken

"When I got this recipe from a friend of mine I was a little skeptical. But once you get past the name it is absolutely wonderful. I usually double the recipe because it is a *huge* hit with my husband and kids."

  • Preheat oven to 400 degrees.
  • In a shallow mixing bowl, mix together mustard, peanut butter, honey and mayo.
  • Dip each chicken breast into mayo mixture, then coat in crushed potato chips. Place on cookie sheet sprayed with non-stick cooking spray.
  • Bake at 400 degrees for 10 minutes on each side.

  1. This tastes wonderful and it is so easy to make! It's become a regular in my kitchen, especially since I tend to have all the ingredients around. Instead of using crumbled chips, I use Panko bread crumbs. I also vary the amount of each ingredient depending on what I feel like-- I usually add more peanut butter and mustard than it calls for, and a little less honey.
     
  2. Meh. This is decent. I followed the recipe exactly and the chips didn't stick at all to the chicken. I might make it again if it's all I have in the pantry. Won't go out of my way though.
     
  3. By the sound of this recipe... I thought it was going to be disgusting. Well... I decided to give it a try because I had some chicken breast out thawing in the fridge for tonight's dinner and yet I was craving peanut butter so I tried this recipe out. Well, much to my suprise... I loved it. I hate mustard and hate mayo but these ingredients were delicious together. My boyfriend loved it as well and now he says this is his favorite dish that he absolutely loves.
     
  4. This is a keeper! Love the flavor that comes from the peanut butter mix, it blends well with the chips. What I really like about this recipe is that not only is it quick and easy to prepare, it tastes wonderful and is something everyone loves. Sided with a cheesy pasta dish - fabulous!

I'm a stay at home mommy with 3 great kids. I've lived in Minnesota all my life. Hubby and I have just bought our first house, it's exciting!! When I'm not experimenting in the kitchen, I love to paint. And paint. And paint some more. Now if I can find a way to bring both my hobbies together... hmmm... My favorite cookbook is my good old faithful Betty Crocker cookbook that my mother gave me when I moved out on my own. It's by far my fave because the recipes are basic, and you can pronounce all the ingredients and have most of them in your kitchen anyway. But Rachael Ray has some great ones too. Love that woman, she's the best!
