A really fast PB bread recipe!
- 2 cups flour
- 3 teaspoons baking powder
- 1 cup nonfat milk (regular is fine)
- 2 eggs
- 1⁄2 cup sugar
- 1 cup smooth peanut butter
- 1 teaspoon salt
- Heat oven to 350°F.
- Grease a loaf pan.
- In a blender, combine milk, peanut butter, eggs, sugar, and salt.
- Blend for a few seconds.
- Add into the batter the flour and baking powder.
- Blend mixture for another few seconds combining well.
- Pour into the greased pan.
- Bake for 50-60 minutes.
This is AWESOME! What a TREAT this is! Made it for tea today, I'll be serving it an hour from now. But with the way the aroma is wafting through the whole house and the kids in the building ringing away at my doorbell, I'm sure this is a huge 'HIT'! Its baked beautifully in my AMC Dutch Oven. Took an hour to bake, but it sure was well worth the time! Thank you for sharing this. This comes from the heart of a major PB fan who just completed a major research on the processes involved to make PB!
I made this today on a whim. It was delicious! I'm still not sure what to serve it with; I just ate it with some butter on it. My family was so-so on it but I really enjoyed it--but I'm a BIG peanut butter fan! So I'll probably eat the whole thing myself. Thanks for posting!
I was surprised at how well this recipe turned out. It seemed so simple-- how could it be any good? But the bread baked up beautifully, with a lovely firm, yet light texture that sliced up very well. I love that the center of the bread wasn't gooey and underdone. I substituted 1 cup of cornflour (which is just blended-up corn meal-- how convenient!) for 1 cup of all-purpose flour, and only did that because I was running low on white flour. I would like to try this recipe again and use about 1/4 cup more sugar, as I have a sweet tooth. Also would like to find some way to reduce the sodium content of the bread (hellooooooo, water weight gain!). We will eat this with jelly as a quick breakfast, as another reviewer suggested.
