Peanut Butter Banana Pancakes

- 1 very ripe banana
- 59.14 ml peanut butter
- 2 eggs
- 1.23 ml baking soda
directions
- Mash banana well in medium bowl.
- Add eggs, peanut butter and baking soda and mix very well.
- Pour by tablespoonful onto hot, non-greased skillet.
- Allow to cook until bubbles appear on top.
- Flip carefully.
- Because of the sugar in the banana and the peanut butter, these pancakes turn very brown when cooked.
- Makes about 16-20 3" pancakes.

These were VERY good! I probably shouldn't have made the entire recipe for myself, but I just made two enormous pancakes and ate them anyway. The peanut butter and banana flavors were very good. The only bad thing is they were hard to flip without the peanut butter/egg mixture leaking off to the side.

The kids are growing...one physically AND mentally, the other only mentally! Actually, Gabby IS growing...but INSANELY SLOWLY! Both kids still LOVE to eat flavorful, healthy food. Preschool has not spoiled Gabby's appetite for veggies. She's finally REALLY learning what she CAN'T eat--GLUTEN! "NO GLUTEN!" is her mantra. Duncan still goes for the carbs but also KILLS for broccoli! I'm blessed!! DH & I love to watch all the Law & Order's and CSI's. DH is into home theater stuff...we've got a GREAT one set up here. I read all the time, knit frequently, help at church, do Bible studies and occasionally do scrapbooks for the kids. I spend lots of time researching celiac stuff and reading up on adoption related things. Maybe sometime in the future, we'll take the kids back to Russia.....
