Chose this recipe specifically because of the picture. The coarse looking texture just appealed to me. But, mine did not come out exactly like that. It did have some cracks and it was a pretty good sized muffin, as I used every bit of the batter. These muffins were absolutely divine! So moist, flavorful and addicting! I had to stop at one because they are huge! Thank you for posting this, it is a great recipe! My family loves them too!
My son is a very picky eater and I actually have to hide them from him. I cut back on the jelly/jam to 1tsp so they are not as messy and added wheat germ for a little extra nutrition. Very tasty!
These muffins are delicious and definitely satisfied my need for peanut butter. They made a great mid-day snack with a glass of milk. Thanks for posting kittycatmom!
I love p.b.&j. sammies...so this was a no-brainer. I can see where this is hubbies favorite Debi.:-) A definite keeper using a variety of different jams/jellies. I used my home-made blueberry.~
I made this for Breakfast as written. I used a Strawberry and Rhubarb Jam that I got from a fundraiser at DD's school. Everyone LOVED it. I will definitely be making this again!
this muffin recipe is wonderful! the PB flavor really comes through, i used a little more then 2 teaspoons of jam and used raspberry which was wonderful, this is a keeper for sure, thanks for sharing Kitty, this was made for KK's Tag forum event
This is a fantastic tasting muffin! However, it is way too sweet to make a regularly occurring treat. I used natural, no-sugar added, peanut butter and homemade low-sugar strawberry perserves. The muffin tastes like a peanut butter cookie! No complaints by me. :-) But, it's not something I would ever serve as a substitute for a good breakfast - this is definitely a dessert muffin.
Just got done eating one! Sweet tooth had hit DH and myself, and we were out of DH's favorite muffin mix. This are soo good - I especially love the bites with jam! I did 6 strawberry jam (pour moi) and 6 grape jelly (for my sweetie). I'm looking forward to breakfast tomorrow! The sugar on top give a nice crunch texture. Thanks for posting. <3
