Peanut Burgers

- 1 cup roasted peanuts
- 1⁄2 cup celery, diced
- 1⁄2 cup carrot, diced
- 1⁄2 cup onion, diced
- 1⁄2 cup parsley, chopped
- 1⁄3 cup sesame seeds
- 1 teaspoon ground cumin
- 1 teaspoon dried dill
- 1 teaspoon ground coriander
- 1⁄2 teaspoon ground fennel
directions
- Mix the cumin, dill, coriander and fennel powders.
- With a grinder or food processor, grind the peanuts, celery, carrots, onions, parsley and seeds into fine particles (but not into a powder or puree). Mix in the powder mixture.
- Turn the mixture in to a bowl, and knead hard for 1 minute. If mixture needs more binding, add 1-2 tbsp water. Mixture will still be somewhat dry.
- Lightly oil a cookie sheet. Drop the mixture into 4 large or 6 medium mounds. Flatten into patties with back of a spoon.
- Bake at 350F for 15-20 minutes, or until burgers are golden and crisp to the touch.
- Serve as you would burgers.
