      This vegetable dish is quick, easy, beautiful and delicious. Made it just as the recipe says - and got rave reviews, but may try it next time with rosemary rather than oregano. Thanks for sharing this excellent recipe!

      Yummy, yummy, yummy! Smiles for my tummy:) This was awesome! I could literally make a meal of these veggies. I sprinkled them with a bit of parmesan cheese before serving. Wonderful dish that I will be sure to make again! Thanks, Miss Annie!! ~Manda

      This was delicious, but I did have to cook it about 10 min. longer, mostly to get the onion past the raw stage. I prepared the veggies early in the day and put them in a zip loc bag along with the mix.

      Very good, but there was not enough liquid. We doubled the amount of oil and vinegar, and I would recomend adding even more vinegar. Nice flavour. Thanks.

      What a yummy and easy dish! I cut up the veggies the day before, and mixed the last 6 ingredients & added right before roasting. Thanks for a great recipe.

      love love love these....I used a half cup of the balsamic vinegar and olive oil as I made a big batch...let the veggies marinate overnight...wonderful...I heard alot of ohhss and ahhs during dinner...

      I love Peacocks so a made this only based on its name. I loved it!! It had so much flavor and tasted so very good. Then I had a party and one of the guests made it for me because she knows i love peacocks. Everyone loved it there was none left at all. Great name and an even better dish.

      Totally great! After making it three times at least during last Fall, I decided to make it as a side dish for N Year's Eve. It was baked the day before and reheated in a heavy bottom pan, which made it less crunchy and more moist : exactly what was needed with my stuffed turkey West-Virginian way! There were 9 of us and the quantities were tip top. Many many thanks
