I'm giving this recipe 3 stars because the taste is fantastic but I think that baking powder might be missing. With the exception of swapping Splenda for sugar this was made by the recipe and it was puffing nicely when I was ready to put it in the pan (I used an 8x4). When it was done it had risen only enough to smooth out the marks I made when smoothing it out in the pan and had a heavy damp texture. I think that and that 1 tsp of baking powder (or more if you make 2 loaves, I made one) of it should make that a 5 star yum.

  1. Preheat oven to 325 degrees F.
  2. In a large bowl, cream together sugar and shortening; add eggs and mix well.
  3. Stir in peach puree and dry ingredients; add vanilla and pecans and mix well.
  4. Pour dough into 2 (9x5) well greased and floured loaf pans.
  5. Bake for 55 minutes to 1 hour.
  6. Let cool 5-10 minutes before removing from pan.
