Peaches, Bocconcini Ands Prosciutto Salad

Peaches are a delicious way to dress up a summer salad! Combine sliced peaches with mixed greens, dried prosciutto, bocconcini cheese and chopped basil. Drizzle with our peach-kissed vinaigrette and enjoy!!

Ingredients Nutrition


  • 8 cups mixed salad greens (spring mix, arugula, baby spinach, etc)
  • 3 ounces prosciutto or 3 ounces bacon, cooked and diced
  • 2 cups europe's best sun ripe harvest peaches, thawed
  • 1 cup bocconcini, pearl size (or regular bocconcini, sliced)
  • 14 cup basil, chopped

  • 13 cup white balsamic vinegar or 13 cup apple cider vinegar
  • 1 garlic clove
  • 1 tablespoon honey
  • 14 cup europes best sun ripe harvest peach, thawed
  • salt and pepper
  • 2 tablespoons olive oil


  1. VINAIGRETTE: Combine first 5 ingredients in blender. Add olive oil and blend until smooth.
  2. Arrange salad ingredients on platter and drizzle with vinaigrette. Refrigerate any remaining vinaigrette.
