  • Preheat oven to 350°F Grease only the bottom of an 8x8" dish.
  • Cut an X in the bottom of each peach. Plunge the peaches into boiling water for 15 seconds each, then peel away the skin. Cut the peaches in half and discard the pits. Slice peaches and place in a large bowl. Add sugar, flour, cinnamon and vanilla; toss to coat.
  • In another bowl, combine flour, sugar and cinnamon. Cut in butter with two knives or your fingers until the mixture resembles coarse sand.
  • Put the peaches in the prepared pan, top with the streusel, and bake 30 minutes until the streusel is golden brown and the juices are beginning to bubble up through the streusel.

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
