Peach Salsa

- 3 large peaches (for about 3 cups diced)
- 1⁄2 teaspoon sugar (to taste)
- 1⁄4 teaspoon salt
- 1 large ripe tomatoes (for about 1 cup diced)
- 1 garlic clove (minced)
- 1 jalapeno pepper (for about 1 tablespoon minced)
- 1⁄4 cup cilantro leaf (to taste, I like less)
directions
- Peel and pit the peaches, chop into 1/4 inch dice and place in a 2 quart bowl. Squeeze lime juice over the peaches. Add sugar and salt, and then stir to coat well.
- Core the tomato, chop into 1/4 inch dice, and add to bowl (leave peel on).
- Peel and mince the garlic, add to bowl. Rinse and seed the jalapeno, mince and add. Rinse and dry the cilantro, and mice--add to bowl. Stir well. Refrigerate.

This is wonderful! Made it up last night - using everything from the garden (ok the garlic was from a neighbor's garden) & it was great! I did use 3 peppers - a they were small - a jalapeno, a serrano & a green Bulgarian carrot pepper. Waiting for the flavors to meld was the hardest part. I did add fresh lime juice from one Persian lime so it wouldn't turn dark overnight & I liked the little tang. Pretty & delicious! Thanks for posting Chef Carolyn H. - she's a kepper!
