Peach Rhubarb Jam

- 1419.54 ml rhubarb, diced
- 236.59 ml water
- 946.36 ml sugar
- 14.79 ml lemon juice
- 595.33 g can peach pie filling
- 2 (170.09 g) package peach Jell-O
directions
- Boil rhubarb and water until rhubarb is tender, about 10-15 minutes. Stir occasionally.
- While that is boiling, dump out the pie filling in a bowl, & dice the peaches.
- Add sugar and lemon juice, stir, and bring back to a boil.
- Add pie filling, stir, boil 10 minutes.
- Remove from heat, stir in jello.
- Put in hot jars & seal.

This was very easy to make. Love the smell from the peach jello as you stir it in. The only thing I did different was to use 1/2 the amount of sugar. I'll try her suggestion using splenda and sugar free jello when I make this again. But first, I want to make Legna's Recipe #298801 next. Made for *Zaar Cookbooks Tag 2008* game

<p>I am a stay-at-home mom to a very active toddler and a 1st grader. <br />My husband & I love to cook & eat at home. <br />My favorite cookbooks are church cookbooks. They have more recipes that my family & I will actually eat. <br />My husband & I both lost quite a bit of weight before we dated & since then, have changed the way we cook/eat. We substitute all ground hamburger in the recipes we use to ground turkey. We love the taste, it's not as filling & cheaper than ground beef. We also cook a lot with chicken & try to stay away from a lot of beef. <br />I also made all of my baby food & have posted some of the recipes that I used. My girls are both picky eaters. However, they loves veggies and fruit and could eat it all day! <br />I absolutely love this web-site and turn to it often for new recipes, I'm always on the lookout for a new recipe. My family doesn't seem to mind:).</p>
