A web find. Fruity muffin that would be good with nice, fresh peaches! Time to make does not include cooling time.

  1. In a mixing bowl, cream butter and sugar.
  2. Add egg, sour cream and vanilla and mix well.
  3. Sift the flour and baking powder together; stir into creamed mixture until just moistened.
  4. Fold in the peaches and pecans if using.
  5. Fill greased muffin cups three-quarters full.
  6. Bake at 400 degrees fahrenheit for 20 to 25 minutes.
  7. Cool in pan 10 minutes.
  8. Remove to wire rack to finish cooling.

These were really yummy and quick to throw together. I was very tempted to add spices (cinnamon, nutmeg, whatever) but I'm glad I didn't; these really have nice flavor on their own. I used Smart Balance for the butter, and used only 1/3 c sugar as we don't like super sweet muffins. Even that much was about our limit, so if you don't like a lot of sweetness I'd back off the full amount of sugar. I also used plain yogurt for the sour cream, and half ww flour and half oat flour. Great recipe. I made these today for guests and was thrilled at how they turned out. I followed the recipe exactly except that I diced the peaches instead of chopped, and if I make them again (very likely) I will do that. I also will double the recipe so that there are some left over!

Wow, iewe, these muffins are so yummy! I made them for breakkie this morning using fresh nectarines instead of peaches, cause thats what I had on hand. They turned out so moist and flavourful, that I was lucky to get a pic, cause they disappeared so fast. ;) Like boomette, I also had to add some liquid to the batter, cause it was rather stiff, but then the muffins baked perfectly. I subbed all whole spelt flour for the ap, cause I was out of that. That way my muffins were a little more on the heavy side, but still turned out fabulous. YUM! Thanks so much for sharing this lovely treat with us. I will certainly make it again as long as I can get my hands on fresh fruit. Made and reviewed for Potluck Tag June 09.
